Ewedu soup

Ewedu soup isn't your typical green soup, this one actually tastes AMAZING and is packed with those nutrients your body craves and desires! I am glad to introduce another member of the "drawy drawy yum yum" association of Nigerian soups- EWEDU!.

Ingredients

  • 1 bag Frozen ewedu
  • 1 tsp locust beans (Iru) optional
  • 1 Stock cube
  • Salt to taste
  • 1 tbsp Crayfish
  • 1 tbsp ground egusi optional

Instructions

  • Allow the frozen jute leave to thaw then blend till it's semi-smooth
  • Pour blend into a pot and bring to boil, then add crayfish, salt, Iru ,stock cube and egusi (if using)
  • Stir well and allow it simmer for 10 minutes until the soup begins to bubble and draw
  • take off the heat and serve
