Nigerian Internships have forever left a positive mark on me…why? Because, I discovered my favourite breakfast and I can confidently tell you that this is the Best homemade Triple decker chicken sandwich recipe. You have to try it!

each recipe I post on this blog has a different side of me. I mentioned an internship in the beginning…don’t worry I am not as old as you think. My mom raised me like an adult. While other parents were taking their children on family vacations, my mom said “do you want something to do for summer” I said. ” Yh!” and she got me an internship at a really good company in Lagos. Bear in mind that I was just thirteen!
As you guys might have guessed – I didn’t like my first few days there. I didn’t understand that 9-5 jobs could be so slow and dull. I was also an intern so I was organizing files, printing papers, fetching tea and coffee, EVEN washing plates and cups (the way Nigeria humbles you is unreal.)

But on my second week something amazing happened. A colleague decided to buy us all breakfast from a small restaurant just behind the office. At first I was fronting but the aroma humbled me …My dear when I bit into that juicy triple decker chicken sandwich I fell in love with every thing around me.
each layer of the sandwich had something to offer. The bottom layer was like a healthy sandwich, the second layer screamed “breakfast!” while the top layer was stuffed with sliced avocados and the tastiest chicken that ever laid its strands on a sandwich.
the room looked brighter, the smiles wider, the work lighter…everything was better. You might think that I am over-exaggerating but I don’t really have an incentive to. If it is that good, I will tell you “it is THAT GOOD!”
and it has become a staple recipe that I use in my household when I have guests over and I know that you will absolutely love it.

What goes in a triple decker chicken sandwich
PreppedChicken– Well the obvious is the chicken part ! We prefer to use chicken breasts because of it’s juiciness and texture (stringiness) when its shredded. The chicken is first cooked , then fried a little to enhance its flavour
Toasted bread– white bread, yellow bread , brown bread…they are all welcome as long as they are thinly sliced and soft. You can choose to toast your bread on a pan or in a toaster. Either way, butter it up (with butter) and let the enjoyment begin
Bacon– Turkey bacon or chicken bacon will work really well in this but if you just have regular bacon then you can use that …shhh … don’t tell
Avocado-we need this to get that buttery smooth top layer
Eggs– goes under the bacon to make the middle breakfast-y.
Mayonnaise/ketchup(Mayochup)-Mayochup is mixture of mayonnaise and ketchup and we spread it in-between each layer so that our sandwich isn’t too dry. if you prefer one or the other , that’s fine too!
Lettuce– A little crunchy green here and there is great
Tomatoes- Tomatoes are richly flavoured and they go perfectly in a chicken sandwich

Triple-decker chicken sandwich recipe
Ingredients
For chicken breast
- 1 Chicken breast
- 1/4 small onion
- 1 scotch bonnet
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- salt
- black pepper
- paprika
For sandwich
- 8 slices of bread
- 1 chicken breast
- 1 sliced avocado
- 2 eggs
- 4 bacon slices
- 2 tbsp mayonnaise
- 2 tbsp ketchup
- 1 sliced tomatoes
- lettuce
Instructions
Prepare chicken breast
- Start by placing your chicken breast in a pot with some diced onion and scotch bonnet. Season with salt, pepper and paprika then add a little water and boil for 15-20 minutes
- Take chicken out of pot, shred chicken with a fork. Next, transfer chicken strips to a lightly oiled frying pan, drizzle a little soy sauce and keep frying for 1 minute
- Take it out and set aside
Prepare sandwich
- Fry your bacon and eggs in a pan and set aside . fry the egg as a whole rather than scrambled or beaten
- Prepare your mayochup by mixing mayo and ketchup
- On a slice of bread, add one leaf of lettuce and tomatoes slices
- Spread the mayochup liberally on the next slice of bread and place it downwards on the vegetables pressing lightly to help them stick
- Spread some mayochup on top the bread and add bacon and egg
- Spread more mayochup on the third slice and press it mayochup side down on the bacon
- Place your sliced avocados and then chicken strips on the top layer and cover the top with the last slice of bread
Taste the bread
- Butter the top on the sandwich and place it top-down on a lightly heated in a frying pan. While the bottom toasts, butter the top
- After 30 secs, using a spatula, flip the bread, then allow it to toast on the other side for 30 seconds.Press it down gently as it toasts so that it doesn't fall apart
- Place it on counter and let it cool.Slice diagonally and Serve!
