Is it just me but I feel like ogbono soup has a bad rep in the streets. If you have never tasted ogbono before and you see its slimy goodness for the first time you might think ” Eww” but I assure you that you are wrong. You see this soup is not any regular smegular kind of soup. if it is made correctly, there is so much to love about it

What to expect from ogbono soup
Slime– The essence of ogbono soup is its slime. Ogbono soup is made of African mango seeds and they become slimy when they come into contact with water.
Highly nutritious– this soup is a a good source of protein, healthy fatty acids, iron, calcium, riboflavin and a range of other minerals. The best part is that you can go all out on this one, you can add an assortments of meats, tripe, chicken ,seafood , vegetables and the list goes on.

Ogbono is very popular in different parts of Nigeria. I have probably eaten ogbono made by people from 7 different tribes and they all hit different.
In this version, I make sure to prep all my ingredients before making my soup:
Roast meat– the secret to a delicious soup is layering the flavours. By roasting your meat in the oven or on a grill you are introducing new flavours into your soup which makes it extra yummy.
Ground ogbono– you need to make sure that the ogbono seeds are ground finely in order to avoid lumps during the cooking process. if you buy the whole seeds then you can blend it in your food processor and if you are short on time then you can opt for the grounded option in the grocery store.
Simple seasoning– this soup doesn’t need too much serere. You only need salt, pepper, stock cubes, iru and cray fish for this one. With Nigerian soups , the simpler the better.

What to serve with this soup
In Nigeria we have a range of strong swallows but I feel that’s its best to have ogbono with pounded yam. The smooth texture of the pounded yam complements the soup, Just scoop and slurp all that goodness SHARP SHARP!
Of course, that is just my opinion. You are more than welcome to eat it with the second in line which is eba(garri). I have had amala and ogbonno and it is delicious as well.I would recommend that you store this soup in a tightly sealed container in the fridge if you plan to consume it within one week and the freezer for anytime after that.
Q: Can I make ogbono vegan? yeah you can. You can swap meat for mushrooms, stock for vegetable stock(which can be purchased in a store) or water

Ogbono soup
Ingredients
- 1 cup ground ogbono
- 1 lb roasted meat and shaki
- 1 cup palm oil
- 1 cup spinach
- 3 cups beef stock
- 1 dry fish washed and deboned
- 3 scotch bonnet
- boiled pomo
Spices
- salt to taste
- 3 tbsp crayfish
- 2 tsp Cameroon pepper
- 1 tbsp iru locust beans
- 2 stock cubes
Instructions
- In an empty pot on low heat mix palm oil and ogbono to form a smooth paste
- Add stock, let it simmer and boil till it begins to bubble and draw
- Add meat, Pomo, and dry fish then season with spices. Let it all boil for 15 minutes
- Garnish soup with chopped spinach and let it simmer for 2 minutes
